1 jar Spaghetti sauce
1# Ground beef
1 Medium to Large Eggplant
2 Eggs
Flour
oil
1# Shredded Mozzarella Cheese
Fry ground beef , combine cooked beef with spaghetti sauce and set aside. Thinly slice eggplant, roll in egg and then flour. Fry eggplant until tender and golden brown. In a casserole dish (we spray ours with Pam) layer meat sauce, eggplant, cheese and repeat. Make sure you end up with cheese on top.
Cover dish with foil and cook at 350 degrees until hot.
Serve with crispy buttered garlic french bread and salad.
